Hi
I have an 85 Camel 501 and used to go by the dip stick level, but found that level would drop alarmingly after only 2-300km needing 0.5lt to bring back to max. However I now put exactly 3lts of oil in it at oil changes as per in a 500 manual I found at a show (presume it would be the same for 501) this brings it to the min. mark on my dipstick and it now uses very little oil so I guess I had been overfilling it before and burning off the excess?

The Maximum level on a dipstick is just that the MAXIMUM level of oil that should ever be in the engine. Running any more oil could mean excessive crankcase pressure and blown seals, oil all over the back tyre etc. and you should drain some out.
You shouldn't fill to the Max mark, the correct oil level is usually described in the handbook as 'Between the Max and Min marks. I tend to run about 2/3 of the way up.
